Flavor
Queso de Valdeon is made with cow and goat milks at the
base of the Picos de Europa in the town of Posada de • Sweet
Valdeón. It is a family operation; the owner, Leticia, took
over from her father Tomas and runs the business with her • Almond-Caramel
brother and cousin. They created Valdeon when the DOP for Texture
Cabrales formed and dictated that Cabrales could only be
made in the town of the same name. Valdeón is sought after • Blue
because it is milder than Cabrales, yet retains an excellent
balance of sweet, spicy and earthy flavors. Valdeon is a fairly • Semi-Soft
assertive blue cheese, without being harsh. The paste is Pairing
semi firm and it delivers a complex array of flavors, with an
underlying sweet, almost caramel-like note. This complexity • Riesling
is multiplied by the inclusion of goat's milk, which has
gained popularity in recent years. The paste is cream- • Serrano Ham
colored ivory, with punctuated holes and striations of
greyish green mold.
