Made at Finca Sierra de la Solana (Sunnyside Mountain Farm). Brioche
Named after the year Cervantes mentioned Manchego in his novel
“Don Quixote de La Mancha.” One of only ten remaining farmstead Texture
Manchego Artesanos still made today. Made exclusively with milk • Semi-hard
from one herd of 500 ewes on the farm where it is also cave aged
with a naturally formed rind, allowing it to breathe the whole time. Pairing
