The folks at Roth like to say their cheeses are made Flavor
with heart in Wisconsin. The history of the company
began when Oswald Roth started importing cheese • Tangy
from Switzerland in 1865, and in the late eighties,
Roth Kase became a Wisconsin producer, using • Mellow
premium milk from small local diary farms down the Texture
road from the creamery. With over 200 awards
under their belts, they now produce many types of • Crumbly
cheese, including some great blues. Buttermilk Blue • Creamy
is their Flagship blue, and is cellar aged for over two
months. This rich and creamy blue has just the right Pairing
amount of piquant-ness. Buttermilk Blue is a work • Pears
horse, great on a cheese board, perfect for recipes
• Cabernet
and dressings calling for crumbles, and nicely melty
for topping a burger.
