The aged cheddars of Grafton Village are handmade using
traditional methods, using primarily Jersey cow’s milk, known • Slight Caramel
for its high protein and butterfat content. These traditional • Brown Butter
cheddars are aged from one to five years, sometimes longer.
The more the cheese ages, the stronger the “bite”. • Notes of fresh grass
Grafton’s signature Clothbound Cheddar is wrapped in cheese- on the nose
cloth and cave-aged for a minimum of 7 months, a traditional Texture
method used for centuries in Britain and the pre-industrialized
US. Aging in cloth allows this cheese to take on a deeper • Semi-Firm
variety of flavors than its plastic-aged counterparts, and at a
younger age. The texture is firm and creamy with a tendency Pairing
to crumble. This lovely cheddar has a mottled gray rind with • Riesling
aromas of cave, mushrooms, and fresh butter. Flavors are
similar to a traditional English cheddar: grassy, nutty notes • Beaujolais
dominate with some lemony accents and a smooth, lactic body
