Dear Valued Customer,
▪ Parasites in our ready to eat smoked Atlantic salmon products are not reasonably likely to occur.
According to Chapter 5: Parasites, in the FDA Fish & Fisheries Products Hazards and Controls Guidance, Fourth Edition,
"Species that normally have parasites as a result of consuming infected prey, apparently do not have the same parasite hazard
when raised on pelleted food in an aquaculture operation. You need not consider such aquacultured fish as having a parasite
hazard".
Also, Chapter 3-402.11, section 2 (B) (3) in the 2009 FDA Food Code, states that aquacultured fish, such as salmon that:
(a) If raised in open water, are raised in net-pens, or
(c) are fed formulated feed, such as pellets, that contains no live parasites infective to the aquacultured fish,
are exempt from the freezing requirements for parasite destruction.
The raw materials used to produce our ready to eat smoked Atlantic salmon products are from farmed salmon that are fed
parasite free pelleted feed.
▪ Our cold smoked wild Sockeye salmon is from wild stock. The raw materials used for this product is frozen at
sufficient temperatures and time to kill any potential parasites. We receive documentation from our suppliers
guaranteeing that the conditions outlined in Chapter 3-402.11, section 1 (A) in the 2009 FDA Food Code have been
met.
o Specifically, “the Sockeye fillets are blast frozen and held for 12 to 24 hours at internal temperatures
between -25 deg F to -35 degrees F. The fillets are then stored at -5 deg F for at least 7 consecutive days”.
