Dear Customer,
Over the last several years many State agencies have been inspecting restaurants that serve
ceviche or offer a rare to medium rare center fish, and cold smoked ready to eat fish for
documentary evidence of parasite destruction. Although our advice remains that any raw fish, meat,
or poultry should be fully cooked before consumption, we cannot ignore the marketplace. For that
reason all raw fish fillets, crustaceans, frog legs, and cold smoked ready to eat fish imported by
Beaver Street Fisheries receive parasite destruction freezing and freezer storage time/ temperature
combinations.
We have established procedures that assure all of our imported products are frozen at – 31
degrees F (-35 C) or below until solid frozen and then stored at -4 degrees F (-20 degrees C) or below
for a period exceeding the required full 7 days (168 hours). Although the USFDA has listed exempt
species, we require all species to receive the appropriate storage time/ temperature. The exempt
species are listed below.
Section 3-402.11(B) exempts the following fish or fish products from the freezing
requirements: molluscan shellfish, aqua cultured fish (such as salmon) that have been raised in net
pens, ponds, or tanks and are fed commercially formulated pellet food, fish eggs that have been
removed from the skein and rinsed, and the following tuna species, which are naturally parasite free
due to their body temperature: Thunnus alalunga, Thunnus albacares (Yellowfin tuna), Thunnus
atlanticus, Thunnus maccoyii (Bluefin tuna, Southern), Thunnus obesus (Big eye tuna), or Thunnus
thynnus (Bluefin tuna, Northern).
