Certificate of Parasite Destruction
Dear Mr. Allinson:
The U.S. Food and Drug Administration Center for Food Safety and Applied Nutrition (CFSAN)
does not include parasite as a potential biological hazard for Yellowfin tuna (Thunnus albacares)
as cited in the Fish and Fisheries Products Hazards and Controls Guidance.

Despite the above non-requirement for parasite destruction, and for the protection of its customers,
Soho Foods, LLC obtains its frozen seafood products from suppliers who are in compliance with
the recommended control strategies provided in the U.S. FDA CFSAN Hazards and Controls
Guidance.

We further confirm as follows:
a.) our source plants have certified that their frozen tuna products have undergone blast freezing
for at least 8 hours at -35°C and subsequent cold storage at -20°C. During shipment to the U.S.,
products are likewise kept frozen at -20°C in container vans for 3-4 weeks. The cumulative
freezing time of all our products at -20°C is therefore 4-5 weeks as compared to the required 7
days.
b.) our source plants further certify that the products they supply to us are continually in
compliance with the applicable sections of the U.S. Food and Drug Administration (21 CFR Parts
123 and 1240) eliminating parasite as a biological hazard by freezing.
