Re: Certification of Compliance (HACCP) for Frozen Fish Processing – TUNA
This letter will serve as Chicken of the Sea Frozen Foods’ (COSFF) continuing guarantee
that the seafood products supplied to your company are in full compliance with the U.S.
Food and Drug Administration’s Seafood Hazard Analysis Critical Control Point
(HACCP) regulations (21 CFR 123 & 1240), and the U.S. Federal Food, Drug and
Cosmetic Act (21 CFR – Chapter 9), as applicable.
All facilities processing products provided by COSFF have conducted a hazard analysis
for each product as required in 21 CFR 123, and have implemented Good Manufacturing
Practices (21 CFR Part 110, and Part 117, as applicable). All facilities have Sanitation
Control Procedures as required in 21 CFR 123.11.
Although exempt in the FDA Model Food Code 2013, Chapter 3. §3-402.11, ¶2.(B), I
also certify that all Tuna products processed for or imported by Chicken of the Sea
Frozen Foods are frozen and stored until sold at temperatures below -20 C (-4 F) in

excess of seven (7) days.
This is a continuing certification and will remain in force until Chicken of the Sea Frozen
Foods notifies you of the contrary.
