PARASITE CONTROL IN FROZEN FISH ITEMS
All of the seafood products Trident Seafoods Corporation produces comply with the
Code of Federal Regulations (CFR) Title 21, Part 123, “Procedures for the Safe and
Sanitary Processing and Importing of Fish and Fishery Products,” commonly referred to
as the HACCP regulations established by the Food and Drug Administration (FDA).
Our HACCP plans follow the recommendations contained within the FDA FISH &
FISHERIES PRODUCTS HAZARDS & CONTROLS GUIDANCE: fourth edition. Please
refer to chapters 3 and 5 of this resource for additional information about parasites.
For Parasite Control, this guidance states “The process of heating raw fish sufficiently to
kill bacterial pathogens is also sufficient to kill parasites.” Therefore, parasites are not
considered a hazard for the HACCP plans relating to our products with an intended use
of cooking prior to consumption. Our products are intended for consumption after
proper cooking unless specifically labeled otherwise.
This guidance also states “Freezing and storing at -4°F (-20°C) or below for 7 days
(total time) … is sufficient to kill parasites” in “fish intended for raw consumption.” This
guidance is followed for our limited products that are labelled as intended for raw
consumption. These products are stored in freezers with a maximum temperature of -
4°F for a minimum of 7 days before they are released into distribution.
The fish species processed by Trident Seafoods include (but are not limited to) Pollock,
Cod, Halibut, Sablefish, King Salmon, Chum (Keta) Salmon, Pink Salmon, Coho salmon
and Sockeye Salmon. The fish species imported and distributed by Trident Seafoods
(exotic species) include (but are not limited to) Mahi-mahi, Swordfish, and Tuna. The
parasite hazard for these imported species is controlled by the primary processor and
the products are continually held frozen when received, warehoused and distributed.
The amount of cold (frozen) time that occurs in the distribution chain for our imported
seafood items meets the time and temperature threshold FDA specifies for parasite
control.
