Re: 2013 Model Food Code 3-402.11 requirements for Destruction of Parasites.
Coast to Coast Importing LLC confirms that the products are commercially frozen at -38°C (-
36°F) or below until product core is solidly frozen to -18°C (0°F) or below. Product is then
packed and placed in frozen cold storage at -18°C (0°F) or below for a minimum time period of
7 days.
Product covered under this letter will include imported frozen Tuna, Mahi, Mussels, Salmon
(farmed), Tilapia, Shrimp, Cod, Pollock, Squid, and Pangasius (Swai).
